day eight

Belgian endive:

Thank you Belgium for this tangy, tender white vegetable.

We bought it thinking that this was just another everyday green you might put in a salad, but as it turns it's a pretty Fancy everyday green. We didn't have time to make it into anything spectacular, so we just stuck with the original plan and made a salad, but this guy definitely deserves a revisit.
